*SUMMARY OF RESPONSIBILITIES*: The Cook Assistant assists the cook and other kitchen staff engaged in the preparation of meals in accordance with company standards, menu specifications and production schedules.
*SPECIFIC DUTIES: *Specific duties include the following: · Assists in the activities of the kitchen staff engaged in proper cleaning, cutting, marinating, seasoning and cooking of food items.
· Washes, peels, cuts, and seeds vegetables and fruits.
· Cleans, cuts, and grinds meats, poultry, and seafood.
· Dips food items in crumbs, flour, and batter to bread them.
· Stirs and strains soups and sauces.
· Weights and measures designated ingredients.
· Carries pans, kettles, and trays of food to & from work stations, stove, & refrigerator.
· Stores foods in designated areas.
· Cleans work areas, equipment and utensils, segregates and removes garbage, and seam cleans or hoses garbage containers.
· Distributes supplies, utensils, and portable equipment.
· Assist in inventory duties when needed.
· Ensure quality and consistency according to specifications and recipes.
· Taste and evaluate food.
· Utilize left over food and ensure proper rotation, labeling and dating.
· Ensure proper chilling time according to flight schedules.
· Performs other duties as required by the mission of the company.

· Basic working knowledge of all relevant machinery used in food production.
· Must have knowledge of proper food preparation, sanitation and hygiene regulations, and methods of preparing recipes.
· Keep work area and chillers clean according to health standards.

*PREFERABLE EXPERIENCE AND TRAINING: *Graduation from High School or General Equivalency Diploma (GED); and one (1) year cooking experience in a catering industry involved in the preparation of food in a kitchen; or any equivalent combination of experience and training which provided the preferable knowledge, abilities and skills.
